gazpacho-andaluzAmong the most well-known recipes, which are typical from Spain, the gazpacho andaluz is the most refreshing one. It is a cold soup made from tomatoes, peppers, cucumbers, onion and some vegetable, with little olive oil and then everything should be well-grounded.

In contrast to the soups, the gazpacho is served cold and the later it is extracted from the refrigerator the better. This recipe has become one of the most popular all over Spain, mainly during summertime when there are high temperatures and our body wants something slightly refreshing.

Although very little is known about the origin of this dish, several studies place it in the center of the Andalusian community, this has caused the gazpacho to be named like andaluz (Andalusian), although it can be eaten everywhere in Spain.

In recent years, you can get the gazpacho andaluz in tetra-brik preparations that are offered on supermarkets, I prefer a home-made traditional recipe though.
